Why does bread go stale?

Stale bread is not just “dry bread.” Its starch structure reorganizes after baking, especially through amylopectin retrogradation, changing the crumb texture.

Short answer: bread goes stale because its internal structure keeps changing after it cools. Starch molecules—especially amylopectin—gradually reorganize into more ordered structures, while water redistributes between starch and gluten. The crumb becomes firmer even when the loaf has not simply “dried out.”

Why the refrigerator can make it happen faster

Starch retrogradation proceeds quickly at normal refrigerator temperatures. That is why bread often seems to stale faster in the fridge than at room temperature. Freezing is different: it greatly slows the molecular motion and is usually better for longer storage.

Why heating stale bread can temporarily revive it

Warming can disrupt some of the ordered starch structure and soften the crumb, which is why reheated bread can taste fresh again for a short time. As it cools, however, the structure can set again.
